Asian Spiraled Cucumber Salad

 

Cucumber is refreshing, crunchy, and very nutritious, but there are few recipes where it is the main ingredient, as is the case with this delicious asian salad.

You have this delicious cucumber salad ready with only sesame oil, minced garlic, gochugaru, rice wine vinegar, soy sauce, honey, and sesame seeds. One great thing about this salad is that it is perfect for all year-round seasons.

This Asian cucumber spiraled salad is a meal with all its ingredients loaded with healthy nutrients. Cucumber is full of nutrients that provide benefits to the body. They contain vitamin A, group B, vitamin C, vitamin K, silicon, magnesium, folic acid, potassium, cucurbitacins, and phosphorus, among others. Cucumber is recommended for weight loss, improves digestive health, is incredibly versatile, promotes hydration, helps to regulate blood pressure, and is packed with antioxidant properties. 

The preparation of this plate of goodness also does not allow you to have it ready the night before because the cucumber will better absorb the flavors and improve considerably.

How to MaKE ASIAN SPIRALED CUCUMBER SALAD.

I start by making my spiral cucumbers by placing a cucumber between two chopsticks and making 45 degrees diagonal cuts on the top. Thereafter, I turn the cucumber over and cut straight slices. I do this for all 10 cucumbers and transfer them into a nice large mixing bowl.

Next, I sprinkle with kosher salt, let sit for 15 minutes, then rinse (you cannot skip this part!)

Lastly, I add 2 tablespoon sesame oil, 1 tablespoon minced garlic, 1 tablespoon gochugaru, 3 tablespoon rice wine vinegar, 1 tablespoon soy sauce, 3 tablespoon honey, and 1 tablespoon sesame seeds and then mix all together until well incorporated.

Viola! Your bowl of Asian spiraled cucumber salad is ready!

ASIAN SPIRALED CUCUMBER SALAD tips & tricks

  • Rinse your cucumbers. Ensure you rinse them after sprinkling kosher salt on them and allowing them to sit. You cannot skip this part.

  • Add extra gochugaru. For an extra smoky and spicy salad, add some more gochugaru.

This delicious Asian cucumber salad works excellently as a compliment to any asian inspired meal or a great snack on its own. With its exquisite flavors, it will keep you wanting for more.  

Ingredients

  • 10-12 mini cucumbers

  • 2 tablespoon sesame oil

  • 1 tablespoon minced garlic

  • 1 tablespoon gochugaru

  • 3 tablespoon rice wine vinegar

  • 1 tablespoon soy sauce

  • 3 tablespoon honey

  • 1 tablespoon sesame seeds

  • 1 tablespoon kosher salt

Instructions

  • Place a cucumber between two chopsticks.

  • Make 45 degrees diagonal slices on the top.

  • Flip the cucumber over and cut straight slices.

  • Repeat for all 10 cucumbers and place in a bowl.

  • Sprinkle with kosher salt.

  • Let it sit for 15 minutes.

  • Rinse well with water.

  • Add sesame oil, minced garlic, gochugaru, rice wine vinegar, soy sauce, honey, and sesame seeds, and mix all.

  • Your salad Asian spiraled cucumber salad is ready.
