Banana Almond Butter Oat Muffins

 

There is something incredibly extraordinary about oatmeal. They can be made into many delicious meals, from your bowl of hot oatmeal for breakfast, and overnight oats, to delicious desserts. There is simply no limit to what we can do with them. And if muffins are something you hold dear, you certainly want to try my banana almond butter oat muffins recipe. The entire family gobbles these, up - especially my toddler!

These very healthy muffins are high in flavor and fiber and low in added sugar, making them one of the best healthy snacks to have on a busy day. It is made of banana which is packed with antioxidants helping to support the immune system, oats which are rich in healthy carbs and protein, and more healthy ingredients.

Some of the many goodnesses of these muffins are that they are an excellent source of energy for the body, bone building, and excellent for the heart!

How to Make banana almond butter oatmeal muffins:

I begin by preheating my oven to 350°F. After that, I mash my bananas in a bowl and add the eggs, pure vanilla extract, and my almond butter. I give it a stir, add the rolled oats, and baking powder, stir again and scoop the mixture into my muffin tins. If unlined, you’ll want to spray some non-stick spray into your muffin tins. I give it a nice tap and then bake!

Bake for approximately 15-20 minutes at 350 degrees until a toothpick comes out clean.

  • Add Berries: don’t be afraid to add a few tablespoon of smashed fresh berries to this mix for a sweet & tangy addition.

  • Easy Glaze: combine almond milk, honey, and peanut butter and then drizzle this paste on top for a gourmet touch.

  • Enjoy Hot or Cold: we just microwave for 10 seconds to warm up if we are home, but they are honestly delicious cold too!

Banana Almond Butter Oatmeal Muffins

Perfect for school lunches or a quick breakfast on the go. Try serving warn with butter and honey!

Ingredients

  • 4 ripe mashed bananas

  • 4 eggs

  • 1 tbsp vanilla extract

  • 3 c rolled oats

  • 2 tsp baking powder

  • 1 1/2 c almond butter (or any nut/seed butter you like)

  • pinch of sea salt

  • butter & honey for spreading after baked (optional)

Instructions
