Eggs on Toast with Feta, Chives, & Tomato Relish
If you are like me, whose mornings could get pretty busy, you certainly want to jump on this! It is quick and easy to prepare, making it a perfect choice for lazy weekends, eventful mornings, and busy weeknights.
You've made a filling meal plate with some cherry tomatoes, toast, feta, chives, eggs, olive oil, balsamic vinegar, salt, and pepper.
This meal is not only filling and delicious but is also packed with healthy nutrients. An egg provides around 6 g of protein, so it covers approximately 5 to 10% of the daily protein requirement of an average adult. Experts say that it is one of the complete foods that exist, as it stands out for the number of nutrients it contains, for its bioavailability, and for the balance of amino acids in its protein.
Feta is recognized as a great source of vitamins and minerals. It is packed with iron, phosphorus, potassium, zinc, selenium, and manganese. Feta is also high in vitamins A and B6. Additionally, it contains probiotics, which can help support a healthy digestive system and boost immunity.
Another star ingredient of this recipe –cherry tomatoes –are a great source of fibre, potassium, phosphorus, and vitamins A and C. A serving of cherry tomatoes (about 10-12) covers 61% of the recommended vitamin C intake.
How to MaKE EGGS ON TOAST WITH FETA, CHIVES AND TOMATO RELISH.
To begin this very quick and easy recipe, I start by making my tomato relish. I do this by chopping half cup of cherry tomatoes into halves and placing them into a clean bowl. I add one tablespoon of olive oil, salt, pepper, and balsamic vinegar to this bowl, stir and keep aside.
Next, I crack three eggs into a bowl, add half a tablespoon of fresh chopped chives and three tablespoons of feta, and beat until well incorporated.
Then, I pour the mixture into an oiled pan and scramble for five minutes. Lastly, I place the soft scramble over my toast, top it with tomato relish, and enjoy!

Ensure your toast doesn’t get burnt: Whether on the grill, frying pan, or toaster, you have to be careful so that the slices of bread do not burn. The ideal toast shade is golden brown.
Do not cook the eggs for too long. For soft, succulent scrambled eggs, ensure you do not cook them for more than five minutes.
Mix up the herbs and veggies. Don’t be afraid to try this recipe with whatever is fresh from the market or garden such as green onions, burrata cheese, parsley, etc.

Ingredients
3 eggs
1 tbsp balsamic vinegar
1 tsp salt
3 tablespoons feta
Two pieces of toast, we used a quality sourdough
1/2 tsp pepper
1 tablespoon olive oil or avocado oil spray
3/4 cup sliced cherry tomatoes
1 tablespoon fresh chopped chives
Instructions
Chop your cherry tomatoes in halves and place in a bowl.
Add one tablespoon of olive oil, salt, pepper, and balsamic vinegar to the bowl.
Stir and keep aside.
Crack three eggs in a bowl.
Add half a tablespoon of chopped chives and two tablespoons of feta.
Beat until well-incorporated.
Toast your break either in toaster oven, toaster, or oven until golden brown, you can add a little olive oil, avocado oil spray, or butter to your bread if you like
Oil your pan and soft scramble for 5 minutes.
Place scramble over toast and top with more chives, feta, then your tomato relish.
Enjoy!
