Sarah's Egg Casserole

 

We love making this super simple and easy dish on busy weeks, or when hosting guests in our home!

This is one of our favorite meal-prep choices because it keeps so well throughout the week. We also love the mixture of gooey rolls with eggs and sausage - the perfect casserole option. If we have guests staying with us, this is also a go-to recipe!

Plus there’s tons of nutrition in this simple casserole plus veggies with the red pepper - you can’t go wrong!

How to Make sarah’s egg casserole

Into a bowl, whisk 12 eggs, plus a few tbsp of milk of your choice. We use plant milk. Add in salt and pepper to taste.

In a shallow pan, brown sausage. About midway through the sausage cooking, add in your diced red pepper. It doesn’t need any seasoning because the oil and flavoring from the sausage does the trick for you. Again, making this recipe so easy.

Pop open your crescent rolls, and lay them out on a greased 9x11 casserole dish. Top with sausage and red pepper mixture. Top with whisked eggs. Top with cheese.

Bake for approximately 30 minutes at 350 degrees until a toothpick comes out clean.

  • Play around with veggies. We love how the red pepper looks in the dish, but we have also enjoyed spinach, mushrooms, onion, etc.

  • Plant-based proteins. Of course feel free to replace the sausage with any plant-based protein of your choice!

  • Cheese or “cheese.” All you need is about 2 cups of cheese, but the type of cheese you use can really elevate the flavor of the dish! Want a more muted flavor? Try mozzarella. Want something more zesty? How about some taco flavored shredded cheese mix!

  • Fresh herbs. You can mix in or top with fresh herbs of your choise. Scallions, chives, parsley, or cilantro can all make this dish extra special.

  • 12 large eggs

  • 1 lb ground sausage

  • 1 red pepper, diced

  • 4 tbsp milk of choice

  • 8 oz package of crescent rolls

  • 1-2 cups of shredded cheese of choice

  • ½ teaspoon sea salt

  • freshly ground black pepper

  • fresh parsley for garnish

Instructions

  • Preheat oven to 350 degrees.
